Spicy Scrambled Egg

Heat the oil in a large, thick-bottomed frying-pan. Drop in the garlic, stir constantly to avoid burning it. Add the tomato puree together with the caraway, coriander, harissa and sweet paprika. Season with salt. Mix well and cook for 5 minutes. Beat the eggs in a bowl and pour into the frying pan. Stir carefully. When scrambled, transfer to a serving dish. Sprinkle with the chopped parsley and garnish with olive rings.
