Mhamsa salade (couscous salad)
Ingredients:
- - pound Mhamsa grains (medium-sized couscous)
- - Salt
- - 2 to 3 tablespoon extra virgin olive oil
- - 1 large onion chopped
- - 2 fresh tomatoes, chopped
- - 1 yellow pepper, chopped
- - 1 preserved lemon, chopped
- - 1 cucumber, peeled (if skin is tough) and chopped
- - 1 teaspoon caper
- - 1 teaspoon dried mint
- - 1 teaspoon white vinegar
- - Pitted green olives, for garnish
Procedure:
Heat a large pot of water to boiling. Add one to two teaspoons salt. Slowly pour in Mhamsa. Gently stir to ensure grains are evenly distributed in water. Cook 7 to 8 minutes or until grains are "al dente." Remove from heat and drain well. Pour into a bowl. Drizzle with 2 to 3 tablespoons olive oil. Using a wooden spoon, stir the grains until they are coated with oil, this will add flavor and prevent sticking. Allow to cool for several hours or overnight.
In a serving bowl. Add onions, tomatoes, peppers, preserved lemon, cucumbers, capers and cooled Mhamsa. Stir to combine. Add ground mint and vinegar. Stir again. Garnish with olives.
