Chicken with Lemon and Olives
Ingredients:
- - 2 chickens weighing : 500-600g each, clean and Jointed
- - 200 ml olive oil
- - 1 onion, finely chopped
- - 1 garlic cloves, chopped
- - 1 tsp ground ginger
- - ½ tsp cumin
- - 2 pinches of saffron
- - 1 litre of water
- - 500 g green olives, stoned
- - 3 onions, cut in thin slices
- - 1 tbsp sweet paprika
- - 100 ml lemon juice
Procedure:
In a large pan place the chickens with the oil, onion, garlic, ginger, cumin and saffron. Cover with the water and season with a little salt. Cover and cook for 30 minutes over a medium heat. Add the olives, onions and sweet paprika. Cook for further 30 minutes then add the lemon juice. Serve with the sauce.
